Mindful break

Yesterday was the day before Tin’s birthday party and it was spent doing the myriad things necessary to get ready for it today. My European counterparts said that Americans go too far in their celebrations and that they barely got a cake for their birthdays – poor things.

Meanwhile, Tin had a friend visiting whose mother and he is vegan and so I opted to make a nice dish for everyone’s supper. I looked no further than a friend’s blog, Cucina Nicolina, and found the perfect recipe for quinoa with greens and my own favorite, mushrooms. After assembling the dish, I thought it lacked a little something and so gave it one more dash of soy sauce and as if magically an alchemy transpired that took this simple dish into a dish of riches. (Actually what the dish had needed is a moment to marry its flavors.) Even the boy’s mother when she came to get him ate two bowls of it!

This morning we did a little rain dance to make sure Tin’s birthday is fully enjoyed!
